Sandcake with a Chantilly Cream.

What you will need:

Pastry Base
210g (400ml) plain flour
100g (190ml) icing sugar
135g unsalted butter
1 egg
30ml water

175g (360ml) plain flour
145g (230ml) cornflour
3 teaspoons baking powder
250g unsalted butter
250g (275ml) caster sugar
4 eggs
icing sugar to dust

Chantilly Cream
300ml thickened cream
1 1/2 teaspoons vanilla extract
1 tablespoon caster sugar


1. Preheat oven to 180°C. Grease a 20cm spring form pan, lining the base with baking paper.
2. To make the pastry base, beat flour, icing sugar and butter using an electric mixer until mixture resembles bread crumbs.
3. Add the egg and enough water to make a firm dough. Form into a small disc and wrap the dough in plastic wrap. Refrigerate for 15 minutes.
4. To make the cake, combine and sift flour, cornflour and baking powder into a bowl.
5. In a separate large bowl beat butter and caster sugar together using an electric mixer until light and creamy. Add and beat eggs one at a time, folding in the sifted flours from the other bowl in between eggs.
6. Roll out chilled pastry as much as possible. Place and press out pastry across the entire base of the spring form pan.
7. Cover the pastry with the cake mixture.
8. Bake for 60-80 minutes. Cake will be ready when a skewer inserted into the centre comes out clean. Leaving the cake inside the pan, place pan on a wire cooling rack for 5-10 minutes before removing the sides of the pan (the spring form base can act as a serving platter). Once cool, dust the sandcake with icing sugar.
9. To make the Chantilly cream, combine and whip thickened cream, vanilla extract and caster sugar using an electric mixer until soft peaks form. This may take several minutes.
10. Serve and enjoy! :)
