Mini Bacon and Egg Pies.


What you will need:

2 frozen shortcrust pastry sheets
Shredded tasty cheese
250g bacon
3 eggs
3/4 cup cream
1 tbsp flour
pinch of salt & pepper
pinch of nutmeg
Diced Onion or Leek (optional)


Method:

1. Cook the diced bacon (you can use a Microwave if you want to).
2. Grease cupcake tray with butter & lay pastry sheets over the tray to thaw. Once thawed, line the  cupcake tray with pastry and prick holes in the pastry base with a fork.
3. Lay cheese over the pastry then place cooked bacon on top.
4. Whisk eggs, cream, flour, salt, pepper and nutmeg together in a large bowl.
5. Pour mixture into the prepared cupcake tray and sprinkle nutmeg over the top.
6. Bake at a moderate temperature (180–200°C depending on the oven) for 40-50 mins, leaving to cool for 10 mins.
7. Enjoy!
