I miss having a guilt free life.


Thankfully I only have three weeks left of term and they should go by pretty quick. Until then it's as though every extra minute that I spend in bed, on facebook, on blogger etc is just another layer of guilt weighing down on my already stressed out head. Considering how swamped I am with assignments and exam preparations I suppose this feeling is normal, but it's definitely a feeling that I can't wait to be free of.

Is anybody else feeling this way at the moment?

Very Chocolate Cake.


What you will need:

Cake
1/4 cup cocoa powder
1/4 cup boiling water
90g butter, softened
3/4 cup caster sugar
2 eggs
1/2 cup self-raising flour
1/2 cup plain flour
1/8 teaspoon bicarb soda
1/2 cup milk
1 teaspoon vanilla extract

Chocolate Ganache Frosting
200g milk (or dark) chocolate, plus extra for shaving
125g unsalted butter, softened

Method:

1. Preheat oven to 180°C (160°C for a fan forced oven).
2. Grease one 20cm springform cake tin with butter, line the base with baking paper, regrease base and lightly dust with self-raising flour. 
3. Using a separate mug, mix cocoa powder and boiling water together and set aside to cool for a few minutes. 
4. Beat butter and caster sugar in a large bowl with an electric mixer until fully combined. Add eggs one at a time, beating well. Sift flours and bicarb soda and stir into the mixture. Add milk and the vanilla extract and mix well. 
5. Gradually stir in the pre-made cocoa until the mixture is no longer yellow.
6. Pour batter into prepared cake tin and bake for 35-40 minutes or until an inserted skewer comes out clean.
7. Allow cake to stand for five minutes before transferring onto a wire rack to cool (cake may be cooled on a wire rack in the fridge if you're in a hurry to get to the icing). 
8. For the chocolate ganache frosting, place 3cm of water in a medium saucepan on a low stove heat. Break chocolate into small pieces and place in a metal bowl over the simmering water. Gently melt the chocolate, stirring occasionally. Once the chocolate has melted, remove bowl from heat and stir through the unsalted butter as the ganache starts to thicken. 
9. Spread ganache frosting over the cake immediately and decorate with choc pearls, petit dragees and chocolate flakes (or whatever your tummy desires!).
