Zucchini Potato Bake Recipe.

Okay, so this definitely isn't a "healthy" recipe that you should be eating all the time, but it certainly tastes delicious and doesn't leave you feeling like crap afterwards (like some cheesy recipes do!).  I made this recipe for a BBQ with my grandparents a few months ago, and despite them asking me not to use too much zucchini (which I did anyway) they absolutely LOVED it!  It tastes so good that you can easily eat it as a meal on it's own.. although it tastes even better with a nice lamb steak, or some healthy rissoles. :)  For something that wasn't made from a packet, it was incredibly easy to make as well.  Definitely a recipe I will be returning to for any future BBQ's..

1 tbsp raw butter
5 peeled potatoes
1 large zucchini, diced
200ml cream
150ml full cream milk
½ cup parmesan cheese
½ cup mozzarella cheese
1 tsp minced garlic
1 tsp rosemary
salt and pepper to taste

1. Preheat your oven to 200°C and lightly grease a large baking dish with butter.
2. Slice your potatoes into 1 cm thick slices, and finely dice your zucchini. Layer your potatoes and zucchini together in the baking dish.
3. In a large bowl, mix your cream, milk, cheeses, garlic, rosemary, salt and pepper. Pour evenly over your potatoes and zucchini.
4. Place in the preheated oven for 1 hour, or until golden and crisp on top.

  1. Oh god, it looks so yummy! xx

  2. Yum!! Definitely trying this one! I'll let you know how it goes! Now i'm wishing I bought those potatoes lol (I didn't end up getting any the other day after all that!)

    1. Damn, you should have! and yep, definitely let me know how it goes! :)

  3. this looks and sounds so DELICIOUS
