My life lately: Babies, blogging, baking, beds..

1. Pursuit of Felicity recently reached 400 followers via GFC. :)  I realise this doesn't mean that over 400 people are actually reading my blog on a regular basis (I prefer to go by my bloglovin' follower count, and even then I'll divide that number by 4 to get a more accurate idea of my readership) however I like to believe that this number in some way represents my humble journey as a blogger.  I've never been one to harass other bloggers with those "follow me and I'll follow you back" attention seeking comments, and I've rarely ever advertised on high traffic blogs or thrown pointless giveaways just to get followers (I now only host giveaways if I believe that doing so will have a positive impact on my business).  I write for me, for my family, for my future family, and my friends.  I write for all of you guys who read intimate posts like this one for no other reason than to see what is happening in my life and to make sure that everything is ok.  I know that I don't have the hugest readership for someone who has been blogging for almost 2 and a half years, and I'm ok with that.  I'm more than ok with that. :)

2. One of my best friends, Katie, came down to visit me last week and we went crazy making cupcakes (effectively throwing clean eating out the window!).  Most of the cupcakes pictured above were iced by Katie, except for the pink and orange ones on the second bottom row which were obviously iced by me! :P  I had no idea what look I was going for with the orange one, but it basically just ended up looking like a bunch of worms, so I tried to be a bit more dainty with the pink cupcake and added a purple accent to try and make it look more like a flower.  Not sure that I succeeded, although they certainly tasted delicious!

3. In case you haven't heard from one of my recent thankful tuesdays posts, next year on the 24th of January (or thereabouts) I am going to be a big sister again! :D  At around the 6 week mark my Dad's fiancĂ© Judy told us that she was pregnant, but because of her miscarriage earlier in the year (which was at around week 9) she asked us to keep the news to ourselves until she had reached 12 weeks.  During this silent time me and the girls (i.e. Judy and her two daughters Lexi and Abby) decided that the baby was definitely going to be a girl, and within a week or two we had all fallen in love with the name 'Mackenzie Faith'.  I would jokingly tell Judy to "look after Mackenzie for me" before I'd say goodbye on the phone, and once the 12 week mark rolled around I was telling anyone I could about my 'new sister Mackenzie'.  Come the 16 week mark though we were thrown through a bit of a hurdle when Judy was sent to Brisbane to get some tests done as the doctors believed that there was a chance that something could be wrong with the baby.  One very long weekend later we received the news that everything was fine, and that during one of the ultrasounds the doctors found what they strongly believed to be a very obvious willy!  I was (and still am a tiny bit) sceptical that the baby is in fact a boy, but my Dad assures me that with a willy like that there's no way the baby could ever be a girl. :P

So anyway.. the photo above is of the presents and card from the 'bump' that I recently purchased Dad for Father's Day (which is this Sunday here in Australia).  I was wandering around Kmart wondering what I could get Dad this year when I suddenly realised that it is perfectly acceptable to buy him gifts for/from the baby from here on out, and so I immediately ran over to the infant section and searched through the clothing racks like a small child digging through their presents on Christmas morning.. clucky much? haha! ;)  In the end I eventually selected a $6 shirt and shorts set for 0-3 months and a $3 one piece for newborns that says 'I love Mummy' and 'I love Daddy' all over it.. talk about a bargain! :D  It will be summer over here when the little fella is born, so thankfully all of his newborn clothes will be really cheap to purchase and they won't seem like such a waste when he grows out of them 5 minutes later. :P  Ahh!  I seriously cannot wait to meet the little dude! My new baby brother foetus (who will hopefully have a better name soon) is exactly 19 weeks old today. :)

4. This next photo is one that I took of my hair growth just the other day.  As you can see, it is now much longer than it originally was this time last year, and it is by far the longest that my hair has ever been.. ever! :) It's even longer again when I can be bothered to straighten it (which isn't often), but I actually think I prefer this messy/wavy look better anyway.  What do you guys think?

5. For the last 6 months B and I have been waking up every single morning complaining of a sore neck and/or back, and although we knew our bed/mattress was the problem, we decided to suffer through it as we were (and still are) extremely poor at the time.  That was until our bed frame decided to break to a point where it was basically being held together by a roll of duct tape.  We couldn't deal with the crinkly tape noise every time we moved around in bed, so we pulled her apart and threw her out on the footpath for kerbside clean up (she was gone within less than 24 hours!).

6. Not having enough money to replace her with a bed of magnificent quality, we decided to hit up Ikea (and may have indulged in their famous $4 cooked breakfasts) and picked up this simple white double bed frame for less than $200 (we had to pay extra for the slats and stuff).  The bed frame also has a matching headboard that you can purchase separately, but we're going to wait until we move house in January and actually have the room for one.  I'd eventually like to move our existing bedroom furniture into our future spare room (the tall boy etc. are such good quality that I would totally keep them for our nursery one day), move B's desk out (if we get a 3 bedroom house then we can have a main bedroom, spare bedroom and an office) and replace everything with all white furniture to make our bedroom more open and peaceful and a nice place to get a good nights sleep.. that's about as adventurous as my dreams are at the moment! :P

Spicy Pizza Pasta Recipe.

400g pasta of your choice (I use a gluten free rice pasta)
1 tablespoon olive oil
200gr pork mince
3 tsp minced garlic
1 small zucchini, diced
1 long red chilli, finely chopped
2 tins cherry tomatoes
salt and pepper
handful of spinach, washed
1/2 cup cream
1/2 cup grated parmesan

1. Cook your desired pasta in a saucepan of salted boiling water for however long is stated on the packet.
2. While your pasta is cooking, heat some olive oil in an electric frying pan on medium heat, and start cooking your mince.
3. Once browned, add your minced garlic, zucchini and finely chopped chilli and continue to cook for another couple of minutes.
4. Next, add your tinned cherry tomatoes (I like to break mine down a bit with a wooden spoon), salt and pepper, and handful of spinach and cook for 3-4 minutes.
5. Stir in the cream, parmesan cheese and drained pasta.  Stir to combine.

Vegetable Quiche Recipe.

1-2 shortcrust pastry sheets (depends on the size of your baking dish)
100gr diced ham or bacon (optional)
1 small onion, diced
1 small red capsicum, diced
½ head of fresh broccoli, stems removed
handful of spinach leaves
4 large eggs
¾ cup cooking cream
pinch of salt
pinch of pepper steak seasoning (or just plain pepper)
1 cup shredded cheese (preferably mozzarella)

1. Preheat your oven to 200°C and lightly grease a round baking dish or quiche tray with butter or coconut oil.
2. Cover the bottom of the baking dish with your short crust pastry (or pastry that you have premade yourself) and bake in the oven for 10-15 mins – this is important.
3. Throw your diced ham or bacon (optional) and diced onion into a large non-stick frying pan (I sprayed my pan with coconut oil first) and cook over a medium heat for 5-10 mins.
4. While these are cooking, finely chop up your capsicum, cut the stems off your broccoli, and wash your spinach leaves.
5. Whisk your eggs, cream, salt and pepper steak seasoning together in a bowl.
6. Once your pastry has finished cooking, remove from the oven and sprinkle a quarter of the shredded cheese over the base of the quiche.  Next, sprinkle all of your cooked ham/bacon and onion over the cheese, then half of your diced capsicum, broccoli and spinach.  Pour half of your egg and cream mixture over these ingredients, then add the rest of your capsicum, broccoli and spinach leaves and pour the remaining egg and cream mixture over the top.  Sprinkle your remaining shredded cheese over the very top of the quiche.
7. Bake in the oven for 40-50 minutes, or until the centre is no longer watery.

My Life Story: Part 2.

Hey everyone,

A few months ago now I posted Part 1 of "My Life Story" where I took you guys on a trip down memory lane from my birth to the beginning of grade 3.  I had a lot of fun writing it, and I think some of you enjoyed reading it, so I decided that today I would dedicate a few hours to sharing part 2 of my life story. :)

I can't promise that my life was incredibly interesting during this next part, but it made me who I am today so that already makes it interesting.. right? :P  Haha!  Anyway, enjoy!

Now that Jamie and I were officially best friends, the two of us started hanging out nearly every weekend.  At first I didn't go over to Jamie's house at all because her step mother didn't want to look after us (her Dad worked as a truck driver and was often away from home), but that was ok because we had more fun at my place anyway.  Some of the fun things I can remember doing together were stealing my brothers action man doll and playing barbies all day, making grilled cheese on toast, pretending to be the Spice Girls, and playing with Pixie - my new poodle puppy. :)  As we grew older I eventually started visiting Jamie at her house when her Dad was home for the day (not very often though), and we would watch scary movies on her Dad's big screen TV and eat porridge and home made nachos. :D  Throughout most of grade 3, and all of grade 4, Jamie and I were pretty much inseparable.  We even started going to Brownies (Girl Guides) together every Monday night.  It wasn't until grade 5 that we started making other friends, but even then we remained best friends right through until the end of high school.  For the record, we're still best friends, we're just nowhere near as close as we used to be.

Grade 5 was a monumental year for me as it was the first time I ever experienced the bitchiness that comes along with being a female.  You see, most of these new friends that I was making were slightly older than me (but in the same class as me) and were starting to get their periods, finding themselves interested in boys, etc etc.  I didn't have my period yet (and couldn't understand their fascination with periods) but found their constant gossiping about boys and "who had a crush on who" to be utterly fascinating.  Of course, if one of my friends had a crush on the same boy as another friend in my grade, it was automatically turned into a full on class war and I would be forced to take sides and defend the crush rights of whichever friend had a crush on said boy first.. talk about drama!  I may have developed my first crush on a boy when I was in grade 5 as well, but as another girl in my class already had her heart set on him I thought it best to keep it to myself. :P

First crushes aside, another reason why I will always remember grade 5 is because it was the year that I cut my foot open whilst camping.  It was a nice sunny day and my family was down by the river playing in the water.  I was standing on top of a big rock at the time when my Dad and brother squirted me from behind with their water guns and scared me to a point where I fell off the rock.  Little did I know that when I landed in the water I had actually sliced my heel open on a sharp rock lying on the bottom of the river bed.

Annoyed about being squirted with their water guns, I quickly stood up and stormed out of the water to tell off my Dad and brother.  I didn't even realise that my heel had been sliced open (my foot was a gaping mess) until my Mum starting screaming and pointing to the trail of blood coming out of the river and stopping at the back of my foot.  As soon as I saw the blood it was like my brain suddenly registered the pain, and oh my goodness did I scream my bloody lungs out.

Because we were out in the middle of nowhere at the time, Mum and Dad loaded us all into the car (Pixie included) and drove us to the nearest hospital which was over an hour away.  Needless to say I spent the ENTIRE car ride screaming my head off and bleeding all over the back seat.  Once we got to the hospital though I was seen to virtually straight away, and 8 stitches later I was feeling right as rain again.  I can still see the scar on my left heel today, although it's really only more of a faint mark now. :)

Grade 6 and 7 were probably the most memorable years of Primary school for me, not just because I was starting to hit puberty, but because I was crushing really hard on a troublemaking boy. :P  It all started at grade 6 camp when I was informed by a group of girls in my class that I really needed to find a boyfriend (because you know, it's absolutely essential that 11 years old be dating).  They told me that because most of the "acceptable boys" had already been "taken" by themselves, that I only had a choice between the class clown/show off/dickhead or the class bad boy who was always in detention for something.  As I couldn't stand the class clown I decided to go with the class bad boy, and so these girls ran off to let the boy know that Felicity was on the market.. haha!

Given that this boy and I had never so much as spoken to each other before, it was amazing how quickly I fell for this kid who I would normally stay away from in case his bad boy attitude got me into trouble.  Before you get your hopes up though, nothing ever happened between us (like it ever could at that age!) but for the rest of grade 6, all of grade 7, and even the first few months of high school, I was totally and completely obsessed with this boy and every girl in our grade knew it. :P

On the first day of grade 7 we were allowed to choose where we wanted to sit.  Obviously the girls chose to sit with the girls, and the boys chose to sit with the boys, but within 5 minutes my crush was acting up so the teacher told him he had to go sit next to me as I seemed like I would be a better influence on him.  HAH! Always being a goody goody paid off.  That morning was like Christmas to me!  Unfortunately the other girls in my group kept complaining about how distracting he was, so a few days later he was moved to another group.. damn those 12 year old girls for wanting to get some work done!  Anyway, it wasn't until the end of the year that this boy and I were finally mature enough to even be friends, and whenever we hung out together outside of school it was always under parental supervision, so nothing was ever going to happen.  Still, whenever someone asks me who my first big crush was, I will always think of that little boy and smile at how silly I was. :)

Healthy Butter Chicken Recipe.

350gr chicken breast, diced
2 tbsp raw butter
1 tsp garam masala
1 tsp ground cardamom
1 tsp paprika
¼ tsp ground chilli
1 tbsp fresh or minced ginger
2 small zucchini, diced
400gr passata
1 tbsp fresh lemon juice
½ cup coconut milk
handful of spinach

1. In a frying pan, cook chicken in a tablespoon of butter until white.  Remove frying pan from the element and put aside.
2. Place a large saucepan/pot over the element and add the other tablespoon of butter.  Add all spices and fresh ginger and mix together.  Simmer for 2-3 minutes.
3. Add in the chicken and diced zucchini, coat in the spices and cook for 2 more minutes.
4. Add passata and lemon juice, mix, cover and simmer for 20 mins on low-medium heat.
5. Add coconut milk and a handful of spinach, mix together and continue to simmer for another 2-3 mins.
6. Serve over a bed of brown rice, quinoa or mixed vegetables.  Enjoy!

Five things.

Five things I have a passion for:

1. Graphic and web design.  I've been obsessed with Photoshop since 2003, and playing around with web design since the first day my family ever got the Internet (that makes me sound ancient doesn't it?).  I just put the finishing touches on my new design services website this morning if any of you guys would like to take a look. :)

2. Trying out new healthy recipes (and occasionally some not so healthy recipes).

3. Watching TV shows.  If I could get paid to watch TV shoes all day, I would.

4. Blogging.  I may not be the best blogger in the world, but I am still passionate about it.

5. Wanting to start my own family.

Five things I'd like to do before I die:

1. Have children.  I'm thinking three.  Harrison, Eleanor and Madison (if I know you in person and you use one of these names and I will hate you and continue to use these names anyway.. you've been warned!). Yes, I am already predicting the sexes. :P

2. Get married to the love of my life.  I don't care where or when, I just want to be able to walk down the aisle in a pretty dress and get hitched in front of all of our closest family and friends. :)

3. Buy a long haired, and a short haired, English cream miniature dachshund. :D

4. Travel overseas.  Anywhere will do.

5. See a movie at the drive-in.  I've always wanted to do this, but I'm waiting for a certain someone to realise this and take me to one for a date. ;)

Gluten Free Zucchini Lasagna Recipe.

1 tsp olive oil
500gr turkey mince
3 tsp minced garlic
1 small onion, finely chopped
salt and pepper
2 tins crushed tomatoes
1 tbsp basil
3 large zucchini, thinly sliced lengthwise
1 cup mozzarella cheese

1. Preheat oven to 180°C.
2. Pour olive oil into an electric frying pan and cook the mince until brown.
3. Add garlic, onion, salt and pepper and continue to cook for a few more minutes.
4. Add crushed tomatoes, basil and simmer on a low heat for 10-20 minutes until the sauce becomes thick.
5. Slice zucchini into ½ cm thick slices, lightly salt and leave to sit out for 15 minutes.  After 15 minutes, lightly dab the zucchini slices with a paper towel to remove excess water and some of the salt.
6. In a large, lightly greased casserole dish, spread half of the turkey mince sauce on the bottom and then cover with half the zucchini slices. Sprinkle with half a cup of mozzarella cheese. Repeat this process one more time and then place your casserole dish in the oven.
7. Bake uncovered for around 45 minutes before serving.

My lovely Monday + recent design work!

Hello everyone!

I hope you're all having a lovely start to the week. :)  It's already Monday evening here in Australia, and so far today has been pretty wonderful for me.  I woke up a little bit later than usual, washed my hair, put on a pretty dress, went and did the grocery shopping (and got a weeks worth of groceries for less than $50!), came home and baked a butter cake for B (well, mostly for B :P), spent most of the afternoon working on blog designs, and now here I am writing this blog post.  Don't you just love it when you feel like you've gotten a lot out of your day?  It doesn't happen very often for me, but I am so grateful when it does!  After I finish this post I'm going to cook B and I a really yummy dinner, watch the latest episode of Dexter and then have an early night. :)

Anyway, on to my recent design work... It's been such a long time since I last put together a post to share my latest redesigns, which is why many of the blog designs pictured below are not actually all that new. Regardless of how recent they are though, I still wanted to take the time to share them all as I highly value each and every one of the lovely ladies that I have had the pleasure to work with. :)

As many of you know, the gorgeous Kayleigh from Couture Girl has been a loyal client of mine from the very beginning, so when she asked me to give her blog design another revamp I jumped at the opportunity.  This time around Kayleigh wanted a much more professional, yet still very girly look, with similar colours to her previous design but on a slightly softer scale.  After just under a week of back and forth emails and various mock ups being thrown around, the design you see above came into fruition and we immediately made the design go live.  I've never really been all that into pastel pink colours myself, but every time I look at Kayleigh's new design I just feel so calm and happy and could stay on her blog all day. :)  What do you guys think? Does her design remind you of cotton candy, lip gloss and pretty stationery?

Another blog design that I finished recently was for the lovely Bianca from Bouquet of Bee.  Bianca is not only an awesome lifestyle blogger, but she is also a real life friend of mine (we met through blogging and found out that we lived around the corner from each other, crazy right?) so it was even more important to me to make sure that I got this design just right.  Through our many conversations together I've quickly learned that Bianca has a very positive outlook on life, so I wanted her design to be a good reflection of that.  Bianca also let me know that she wanted her design to be fun and colourful, yet simple and easy to read, which is why we decided to go with a simple white background - to make the colours pop!  The hand drawn teacup in the header is probably my favourite part, mainly because the flower on the teacup was inspired by one of Bianca's tattoos.  I love it when I can work together with a client to make their design more personal and unique to them, and that's exactly what happened when it came to Bianca's design. :)  So what do you guys all think?

Probably one of the most challenging, yet incredibly rewarding designs that I have created was for Stephanie from Beauty Excel.  Being a perfectionist much like myself, Stephanie had a very specific idea in mind when it came to her design, and neither one of us would rest until her design was absolutely perfect.  I could spend hours writing about the over all design processes, but in the end all that matters is that our persistence really paid off. :)  As you can see, Stephanie opted for soft mint and baby pink pastels, with lots of white and touches of grey throughout her design.  She also insisted on a seamless scalloped border that gave the impression of lace and frills, and I think the end result just proves that perfection was worth the wait. ;)

Captivated by one of my previous designs that I had put together for Couture Girl, Stephanie (a different Stephanie this time) came to me to see if I could help her out with a blog design of her own.  Stephanie's blog, Captivating Beauty, was new to the blogging scene at the time, so I was practically given a blank canvas on which to work my magic. :)  All Stephanie told me was that she wanted a lot of white space, peach coloured fonts, a red 'smudge' effect, and scalloping underneath her sidebar titles.  The idea of red smudging with a peach coloured font was hard for me to wrap my head around at first, but with a little bit of tweaking I was able to bring her ideas to life and create a design that we were both very happy with.  What do you guys think?  Do you think I managed to pull the smudging effect off okay?

Nafisah, another loyal client of mine, contacted me not too long ago enquiring about getting an updated blog design for her awesome beauty blog Bamblings of Naffy.  You'd think it would bother me to update a design that I have already put a lot of work into, but in all honesty, there really isn't anything that excites me more. Everyone changes, including their blogs, so when my clients trust me enough to grow along with them it is hugely rewarding for me. :)  Anyway, back to Nafisah's design.. Naffy told me that she wanted to keep her baby pink background with touches of baby pink throughout, but that she was keen for me to shake things up a bit by throwing some fuchsia and turquoise shades into the mix.  She also told me that she wanted me to keep things simple and tidy, with some kind of watercolour effect somewhere in the header.  Less than a day later and I was installing the new design for her. :)  Do you guys like what I managed to come up with?

I can't really remember much of the story behind this design as this was the very last design that I worked on right before my teaching internship.  What I do remember though was that Nicole was incredibly easy for me to work with, and that NicNack'sNails was a pleasure for me to design. :)  The main theme of this design was to be centred around nail polish, beauty and the colour blue, and as you can see, I'm pretty sure I nailed it.. haha! ;)  So what do you guys think?  Do you like the chevron background as much as I do?

Finally, last but not least is the blog design that I created for Gemma from Flutter and Sparkle. :)  As you can see, the theme for Gemma's design was butterflies and sparkles (heavy on the butterflies) with lots of colour and pretty, swirly fonts.  Although not my usual style, it was nice to get out of my comfort zone for a change and work on a design that pushed me to be adventurous in my creativity.  So what are your thoughts?  Should I step out of my comfort zone more often, or should I stick with my usual style of designs?

My life lately: Post Uni life, new hair + sausages.

1. I'm not sure if I've already mentioned this on here, but whilst growing up as a kid, my all time favourite PlayStation game was the almighty Tomb Raider.  It was the only game we owned that had a female as the main character and it was by far the most interesting and hardest game(s) to finish.  No other game could ever compare in my books, not even Spyro the Dragon or Crash Bandicoot.  So anyway, you can imagine my delight when almost two decades later a rebooted version of the classic Tomb Raider was released, and a lucky girls boyfriend decided to bring the game home for her to play! :D  Now despite having my final assignment for Uni to write at the time (I haven't done one of these posts in a while, hence the Uni talk) I just couldn't pass up the opportunity to sit in front of the Xbox* for 12 hours straight and release my inner 9 year old, haha!  It ended up taking just over 2 days to complete the entire game, however, being the perfectionist that I am I desperately needed to reach 100% by finding all the hidden items/secret tombs etc. and so spent the next few weeks going back (there's a time travel feature in the game) to find everything.  As you can see from the photo above, I eventually reached 100% and had to document my success.  The game was seriously amazing and I highly recommend that everyone give it a go at some point.  I loved it so much that I even started playing it a second time.. too much? never!

*B wouldn't let us get a PlayStation when we moved in together, but I'm still a total PlayStation girl at heart.  I mean, I still use the PlayStation keys for goodness sake! :P

Somewhere in between starting the Tomb Raider game and achieving 100%, I finished up my final assessments for Uni and awaited the release of my results.  Needless to say I was SO relieved when I found out that I had passed everything (I may have even done another happy dance and screamed with delight into my pillow) but the reality that I am actually now a qualified teacher didn't kick in until I received the email above (obviously the email didn't come with a moustache and in fact came with my teacher registration number).  Even though I don't want to become a full time teacher any more, the email above means that I can be a relief teacher starting from.. well.. since the day I received that email!  I haven't had a day of relief teaching yet as I am trying to focus on being a full time graphic designer, but once I get settled into a proper routine I will definitely put my name down on the supply teacher registry. :)

3. A couple of weeks ago I decided to curl my hair for the first time in ages (I can't for the life of me remember why though, was I going out somewhere? who knows!) and was truly amazed by just how much my hair has actually grown.  It's the longest it has EVER been, and even though it's a pain in the arse to maintain, I couldn't be any happier with my long mane. :P

4. As happy as I was with my hair that day though, I decided to let my cousin Danielle take a centimetre of split ends off when I visited her last weekend.  She also offered to colour my hair for me as it was looking a bit drab, so I decided to spice things up a bit by going for a dark brown/mahogany shade.  Most people wouldn't know the difference because my hair colour is almost always some variation of brown, but I can personally see a huge difference and am really happy with the change. :)

5. On the same weekend that I was up visiting my cousin, I also spent the weekend chilling out with my family.  The short video above was taken after we had finished eating our dinner and were sitting in the loungeroom watching our favourite Aussie comedian, Carl Barron, on dvd. :)

6. This next photo is a little bit out of order, but basically, the day before I came up to visit my family, B spent an entire morning helping me to create my new computer set up pictured above. :)  You see, for the past 5 years I have been working solely from my trusty dell laptop, which although still works perfectly, has a pretty small monitor with terrible colour calibration (not good for a graphic designer!) that desperately needed to be replaced.  Because I can't afford a whole new computer right now, B suggested that I still use my laptop for the actual computer, but that I purchase a new monitor and wireless keyboard to use with it instead (you'd think I could figure this out for myself, but no!).  I then had the genius realisation that the little draw underneath my desk has plenty of breathing room to store my laptop as well as a huge space at the back for the monitor and power cords to go through and remain somewhat hidden from view.  Being the lovely guy that he is, B then helped me to find the cheapest/best quality monitor and keyboard around our area, and after a little bit of shopping (and bargaining) we were back home setting up my new computer before lunch time. :D  I eventually want to get a whole new computer desk and a more ergonomic computer chair, but until I'm a little bit richer (or a lot richer, my tastes have become quite expensive lately) I am super duper happy with how my office looks right now! :)

7. Back to the weekend with my family.. on Sunday my brother Mitchell unfortunately had to work, so Mum and I headed into the city with the furbabies to check out the Boggo Road Markets (which turned out to be rubbish) and to attend the Brisbane Dachshunds winter meet up in Woolloongabba.  I'd never been to a Dachshund meet up before, so I had no idea what to expect, but once we arrived I never wanted to leave. There were so many Dachshunds there (at least 70) and of all different varieties, and because the meet up was in a dog park the dogs were all allowed off their leashes, so there were 70+ yapping crazies running around like mad man.. haha!  The photo above was taken to show you guys which variety of Dachshund I eventually want to get when B and I move into a bigger place that allows pets (although I'm thinking we might actually prefer a short haired english cream), but as you can see, poor Phoebe couldn't handle that I was giving another dog attention and started jumping at my legs and whining like a small child lost at the grocery store. :P  I also took a quick video of what the meet up looked like shortly after we had first arrived. Bare in mind that within half an hour of filming this there were more than twice as many Dachshunds there than what is shown in the video.

Homemade Vegetable Nuggets Recipe.

1 large sweet potato
2 yellow squash
1 zucchini, grated
1 carrot, grated
1 brown onion, finely chopped
1 tsp minced garlic
1 tsp minced ginger
salt and pepper
1 egg
LSA Meal

1. Preheat your oven to 200°C and line a baking tray with baking paper.
2. Peel and cut your sweet potato into small pieces, then put on the stove to boil for 15-20 minutes.
3. While your sweet potato is boiling away, grate your squash, zucchini and carrot and place in a large bowl.  4. Finely chop up your onion and then cook in a frying pan with the minced garlic, ginger, salt and pepper for a few minutes.  Once the onion is soft and appears translucent, scrape the onion into the bowl with the rest of the veggies.
5. Once your sweet potato has finished boiling, drain, mash and then leave to cool for a minute.  Once cool, add into the same bowl as the rest of your veggies and thoroughly combine them using a wooden spoon.
6. In another bowl, whisk the egg, and then pour your LSA meal out onto a separate plate beside it.
7. Grab a handful of the veggie mixture and shape it into a large “nugget” like shape (the larger the nugget, the less LSA meal you will need).  Dip your nugget into the egg mixture and then quickly coat in the LSA meal and place on your baking tray.  Repeat this step until you've used up all of your veggie mixture.
8. Transfer your loaded baking tray into the preheated oven and bake for 15 minutes.
9. Once your nuggets have finished baking, leave to cool for at least 10 minutes as they will be very hot.
